Backpacking Recipes

Try out some of tested recipes that we've enjoyed while camping. Do them over a campfire or enjoy at your home!

Chicken Alfredo with Pasta

 

  • 1 lb. Spaghetti

  • 2 pouches Chicken meat

  • 1 pkg. Knorr Alfredo Sauce Mix

  • 1/3 cup + 3T. Instant non-fat dry milk

  • 1 ó cups Water

  • ó cup Parmesan cheese

  • 2 T. Dried parsley

At home, package dry milk in a small plastic bag. Combine Parmesan cheese with the dried parsley in a separate plastic bag.

At camp, bring a large quantity of water to a boil and prepare the pasta (approximately 8-10 minutes).

Drain most of the water from the pot, trying to leave 1 Vi cups of water in the pot with the pasta. Add the dried milk and the Alfredo sauce mix to the pasta stirring with a spoon as you do this. Add the chicken to the pot. Allow this mixture to simmer until the sauce thickens. Add the Parmesan cheese and parsley mixture just before serving.

Note:

A dehydrated vegetable could be added to this recipe. Add the vegetables with the chicken and allow to simmer until the sauce thickens.

Jan Hackett's Chicken 'n Dumplings

  • 2 pkgs. Knorr Leek Soup Mix

  • 2 pouches Chicken

  • 1 pkg. Flour Tortilla (8-inch)

  • 3/4 cup Dried Milk

  • 3 cups Water

At home, repackage soup mixes and add the dried milk to the package. At camp, in a large pot, add the soup mix to the water and bring to a boil. Meanwhile, cut the tortillas into strips about 1 inch wide. When soup boils, add chicken and bring to a second boil and then add the tortilla strips and boil once again.

Check thickness of the mixture and add water if it is too thick.

Note:

Dehydrated vegetables, such as peas and carrots, may a!so be added along with the chicken.
